Roasted Cauliflower Ingredients:
- 1 Head cauliflower, trimmed of green leaves
- ¼ Cup Olive oil
- ¼ Cup Melted butter
- Crunchy Sea Salt (to taste)
- Fresh herbs (for garnish)
- Pomegranate seeds (for garnish)
Place olive oil & butter in medium mixing bowl and soak cauliflower, stem side up, for 30 min.
Over high-heat, in heavy bottomed roasting pan or cast iron skillet, sear cauliflower (stem side down) for approximately 3 minutes.
Transfer to oven and cook for 20 minutes—occasionally removing pan to baste cauliflower.
Finish with crunchy sea salt, fresh herbs and pomegranate seeds.
